happy birthday!




 





Happy Birthday Darling J! 

I was under pressure from our 3 yr old B to make Daddy a 'Lion King' cake. Fortunately I was able to talk him out of it and announced that we'd make a rainbow cake instead!

I had the Woman's Weekly BAKE book open on the page of the rainbow (marble) cake but decided on another Woman's Weekly recipe from WW Classic Sponges Teacakes Fruit Cakes.

cut & keep butter cake

125g butter
 1 teaspoon vanilla essence
1 1/4 cups (275g) caster sugar
3 eggs
1 cup (150g) plain flour
1/2 cup (75g) self-raising flour
1/4 teaspon bicarbonate of soda
1/2 cup (125ml) milk


1 Preheat oven to 180ºc / 160ºc fan-force. Grease deep 20cm-round cake pan; line base with baking paper. 

2 Beat ingredients in medium bowl on low speed with electric mixer until just combined. Increase speed to medium; beat about 3 minutes or until mixture is smooth and pale in colour. 

*At this point we divided the mixture into 5 parts and added food colouring; aqua, violet, orange, pink and then 2 tablespoon cocoa added to 2 tablespoon milk. We added the mixtures to the cake pan and then with a skewer gently (so as not to tear the baking paper) twirl it. This mixes the colours and makes for a great marbling effect. 

3 Cook for about an hour. Serves 10.
